Fresh Guacamole with Lime
This recipe can be modified to feed more in a group however once you taste this, you will want to eat the whole batch!
2 ripened avocados
1 green onion, chopped finely
1/4 of red pepper, chopped
1/4 cup feta cheese, crumbled
1/4 cup almonds, coarsely chopped
Cut avocados, score the flesh into cubes and squeeze into bowl. With a fork, lightly press on the pieces to break them down slightly, it's nice to have a coarse chop. Squeeze half of a lime over the avocado, mix. Toss in bowl, chopped green onion, red pepper, feta cheese and almonds. Stir and serve! For some kick, add chopped jalapenos or tomato. Serve with multigrain chips, fresh pitas or delicious as small salad.
